    Healthy Choco Bites

    Recipe:

    Medjool Dates 400/500 gramm

    Peanut butter, Hazelnut butter, Seed butter Good quality dark cooking chocolate

    Method: Line a tray that will fit into your freezer with grease proof paper.

    Remove the stones from your dates, you can either half the date completely if they’re quite large or what I prefer to do is remove the stone and keep the date joined on one side so you can pop in the nut butter and close it up again. Once all stones are removed spoon nut butter into each date.


    When the dates are all filled pop the tray into the freezer and leave it for at least 3/4 hours or overnight if easier. Once the dates are completely frozen melt your chocolate, allow it to cool a little so it’s not so runny ( otherwise a lot of the chocolate will run off and your chocolate layer will be very thin) then using two forks dip the date into the chocolate completely coat it then use the forks to gently remove excess chocolate before placing it back onto the tray. As the dates are frozen they will help the process of setting the chocolate quickly.

    Once all of the dates are coated pop the tray back into the freezer, when the chocolate is set you can put the dates into a airtight container and keep them in the freezer.

    I’ve tried storing them in the fridge but they go too soft and lose their chewy caramel like texture, surprisingly when you take one from the freezer it melts really quickly so you can pop it straight into your mouth.
